Farm Life Friday: From Field to Table - Fruit Pizza Recipe

These are just a few of the things I love about summer. 


 Fruit Pizza is my all-time favorite summer dessert.

Crust:
1 package Betty Crocker Sugar Cookie Mix prepared as instructed on package

Topping:
2 8oz. packages softened cream cheese at room temperature
1 cup powdered sugar
2 TBS milk
1TBS lemon juice
various amounts of desired fruit :)

Preheat oven to 375 F
I use 2 tart pans with removable bottoms...and spray them with nonstick spray
divide the cookie mix in half and put a half in each tart pan
press the dough out over the bottom of the pans
bake for 10-14 min. depending on your oven and how soft or crunchy you like your cookie
(for the record, I like mine soft and bake for 11-12 min)

Meanwhile, in a medium mixing bowl, combine  the cream cheese, powdered sugar, milk, and lemon juice and beat with an electric mixer until smooth.
Cover and refrigerate.

Wash, peel and slice fruit.
Toss the sliced fruit in lemon juice.
Cover and refrigerate.

When the cookie is finished baking, allow it to cool completely-very important.
Try not to get too impatient or it will ruin the fruit pizza.
After it's completely cooled, divide the cream cheese mixture in half for the 2 pizzas.
Spread half the mixture on each pizza and top with fruit. 
Slice and enjoy :) 






And of course it wouldn't be a farm post without the Dr.
Why is his outfit so attractive to me? 
Maybe it's because it's something a little boy would wear, yet it is so manly, too...playful yet workable
...excuse me, I got a little distracted.

    Have a good weekend and try to stay cool! We are headed to the NC mountains (Boone area) to see my grandparents so I'm hoping it's a little cooler their!
