Homemade Southern Banana Pudding

Vanilla Wafers
  • 4 ripe bananas, peeled and sliced
  • 4 egg yolks
  • 2 cups milk
  • 1/3 cup flour
  • 3/4 cup sugar
  • 1 tsp vanilla
  • 4 egg whites
  • 1/3 cup powdered sugar
Custard: Whisk together the egg yolks, milk, flour and sugar in a sauce pot over medium heat. Whisk frequently until the mixture becomes thick. Takes a little less than 10 minutes, usually. Add vanilla just before removing from heat. Meringue: Beat the egg whites and powdered sugar together using an electric mixer on high speed until soft peaks form. *I usually start this process just after I get all of the custard ingredients whisked in the saucepan. Line a baking dish with vanilla wafers. Layer half of the bananas on top of the wafers. Pour half of the custard mix over the bananas and spread evenly. Put another layer of vanilla wafers, the remaining bananas, and the rest of the custard mix and spread evenly. Top with meringue. Broil for about 3 minutes, or until the peaks of the meringue turn golden brown.
