Chicken & Cheese Enchiladas

  • 4 boneless, skinless chicken breasts, cubed
  • 1 can Rotel with green chiles, drained
  • 1 can (4.5 oz) green chiles, drained
  • pepper
  • Tabasco to taste
  • 4 cups shredded Mexican cheese (reserve 1 cup)
  • 6 large tortillas (I used La Tortilla Factory brand-super healthy)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (10 oz) green chile sauce (but feel free to use the traditional red sauce if you prefer it. I like them both)
Preheat oven to 350 degrees F. In a skillet combine chicken, Rotel, green chilies, pepper and Tabasco and heat until chicken is cooked through. Spread just enough liquid from cooking chicken onto bottom of a 9x13 baking dish. Heat tortillas in microwave 45 seconds. Spoon chicken mixture into tortillas and top with 1/4-1/2 cup shredded cheese. Roll up tortilla and place in baking dish. Repeat 5 times. Spread diced tomatoes over the enchiladas. Pour 3/4 can of green chili sauce on top of enchiladas. Top with remaining shredded cheese. Bake for 20 min. Toppings:
  • sour cream
  • salsa
  • avocado
  • fresh cilantro
Serve with black beans, Mexican rice, or tortilla chips and salsa. These are delicious-Enjoy!
