Georgia Peaches

I am so proud to be a Georgia Peach!! I mean, just one taste of a juicy Georgia peach like these will make you melt. We enjoy these delicious peaches so much that we try and put up a bunch to last us until next year. This year I am clearly on a freezing kick as last year I only canned. I need to mix it up a bit. So, it's very simple to freeze these beauties! I simply prepare a pot of boiling water, just as if I am getting tomatoes ready to freeze or can. Then, I drop several peaches at a time in and leave them for 30-60 seconds. Then I ladle them out into a strainer and rinse them with cold water. The skins will peel off easily, so just discard them in a garbage bowl. After your peaches are all peeled, you can slice them...or you can dice them...either way you choose you just add a little sugar and fruit preserver and toss them gently in a bowl. Let them rest until the sugar has dissolved, which is around 10 min. After that, simply pour/spoon them into freezer jars or containers! That's all there is to it!
