You can feel it in the air: the cool crispness that indicates that summer really is over. It was so nice to be able to turn the a/c off and open the windows last night. The hard part is dragging myself out of bed in the mornings when I'd rather stay snuggled up in my down feathers. The leaves were absolutely beautiful in the Great Smoky Mountains last weekend on the way home from Knoxville. It was amazing to note the difference in the leaves there and here in Athens. There is something about this weather that makes me crave pumpkin pie. I typically bake at least a dozen pumpkin pies and apple pies during the fall. I switched it up this time and made Pumpkin Swirl Cheesecake and it got rave reviews from friends and relatives who tried it. I must say it "hit the spot." It was so cold this morning walking from one class to another on campus. I could ride the bus, but I try to get in my exercise instead. Plus, the campus is just so beautiful and it is refreshing to walk outside after being cooped up in a boring classroom. I can't believe tomorrow is Friday; where has the week gone? Time is flying by so fast.
